Oven-Roasted Corn On The Cob With Garlic Butter-Perfectly seasoned corn on the cob oozing with garlic butter flavor! Easy, mess-free, and no grill required! The perfect summer side dish!

How has the summer weather been where you live? Here in Indiana, it seems like we’ve either had really hot days or it rains. We’ve had a lot of rain this summer. The grass is extra green and the sweet corn is phenomenal.

Growing up in the Midwest, we had an ideal that the corn crops should be knee-high by the 4th of July. Is this a thing other places? I remember riding in the car and hearing comments about how the corn crops looked good and how they’d definitely be knee-high by July. I’m not sure when it happened, but I’m most definitely this person now. 🙈

Silly or not, someone had the right idea. Summer after summer, local farmers churn out absolutely delicious sweet corn. I always look forward to this time of year when I can eat my weight in corn on the cob. It would be an injustice to the people who grow this great corn to not have a fantastic way to serve it. No worries-I’ve got us covered.

You may be thinking that corn on the cob is great grilled or boiled or even microwaved. Really, you can’t go wrong. As I mentioned, we’ve had a lot of rain this summer so I went on a search to find an alternative to grilling. This method produced sweet and juicy corn with that caramelized flavor that I’d put up against any grilled corn. The secret is this corn is broiled for a few minutes after being roasted, giving it that beautiful char and smoky flavor.

Not to mention that garlic butter that is on this oven-roasted corn on the cob. Simply mix together softened butter, minced garlic, salt, and pepper and slather it on your corn. Don’t be shy. This recipe is definitely adaptable. If you like different seasonings on your corn, have at it!

Whether it’s raining, you don’t have a grill, or don’t want to take time to fire it up, this oven-roasted corn on the cob with garlic butter is a great alternative. It’s easy, mess-free, and oh-so-delicious!
